A gathering will be at the Williams Dingmann Family Funeral Home, Avon from 10:00 AM to 2:00 PM on Saturday June 12, for Jennifer L. Ellingson who died on May 31, 2021. The gathering will conclude with a prayer service starting at 2:00 PM. Rev. Edward Vebelun OSB will officiate.
Jennifer was born December 26, 1972 in Park Rapids to Jerome Felt and Shirley Fritze. She grew up on a farm near Sebeka and graduated from Sebeka High School in 1991. After graduation she moved to Fergus Falls and attended Fergus Falls Community College. She managed a KFC restaurant until 1993. Jennifer moved to St. Cloud where she rented an apartment with her father. On May 3rd 1997 she met Scott Ellingson, marrying on that date in 2003. Four children were born to their union; twins Madeline and Brandon (deceased), Melanie, and Emily. Jennifer worked at several jobs in St. Cloud, Lantz Lenses, Vision Ease, Target, and Ben Franklin, until 1994 when she went to work for the St. Cloud VA Medical Center where she worked for over 21 years until her health would no longer allow it.
Jennifer’s family meant the world to her, putting them before anything else. She so much loved to go 4-wheeling, especially playing in the mud. She also loved to fish and was excellent at filleting them too. Another hobby she had was crocheting. She made some very beautiful blankets. Her favorite hobby, however, was cake decorating. A dream of hers was to open her own bakery. She was also very involved in Girl Scouts, being a co-troop leader for many years.
Survivors include her husband Scott, her daughters; Madeline, Melanie, and Emily; her mother Shirley, step father (Bill) Fritze, brothers; Jeff (Heather), Justin (Amy), Jerry Dan (Angel); many nieces and nephews, her mother-in-law Linda; father-in-law Dale; step mother-in-law Sue; step father-in-law Mark; brothers-in-law Eric and Mark, and sisters-in-law Evelyn and Jody, and other extended family members.
She was preceded in death by her son Brandon, father Jerome, grandparents Leah and Harold Felt, and Ray and Eldora Wattenhofer.
